Ingredients
- 1 cup raspberries
- 1.50 tablespoons sugar
- 8 sprigs fresh tarragon
- 1.50 tablespoons red-wine vinegar
- Ice
- 0.25 cup chilled sparkling water
Instructions
- In a large nonreactive pot, combine raspberries, sugar, and tarragon. Let it stand at room temperature for 1 hour, stirring occasionally.
- Cook the raspberry mixture over medium heat until it starts to simmer, about 5 minutes. Then, add the vinegar and continue cooking until it comes to a bare simmer, approximately 3 to 5 minutes. Avoid letting it boil.
- Remove the pot from heat, cover it with cheesecloth or a clean kitchen towel, and let it stand at room temperature for 24 hours.
- Remove and discard the tarragon, then strain the mixture into an airtight container. Refrigerate the shrub until cold, for at least 1 hour and up to 1 month.
- To prepare a drink, fill a glass with ice. Add 1 1/2 tablespoons of shrub and top with sparkling water. Stir once and garnish with fresh raspberries and tarragon, if desired.
