Ingredients

  • 1/2 tbsp loose leaf white tea (or 1/2 sachet tea bag)
  • 1/2 cup water
  • 1/2 tbsp honey
  • 2 slices lemon
  • 1.50 oz vodka (or white rum or gin)
  • 3 sprigs fresh thyme (or mint if preferable)
  • 2 cucumber ribbons (optional: a few slices to muddle)
  • ice
  • 1/2 cup sparkling water (alternatively use sparkling wine or champagne)

Instructions

  1. Heat the water and steep the white tea for up to 5 minutes. Set it aside to cool slightly.
  2. In a cocktail shaker, combine 1 lemon slice, 1 thyme sprig (or mint), honey, and the vodka. If using cucumber, add a few slices to muddle.
  3. Smash the ingredients in the shaker using a muddler or the back of a wooden spoon.
  4. Add the brewed tea and plenty of ice to the shaker. Shake the mixture well.
  5. Place ice and cucumber ribbons in a cocktail glass.
  6. Pour the cocktail mixture into the glass and give it a final stir.
  7. Top it off with sparkling water. Garnish with extra thyme and lemon.
