Summer Berry Bliss
A refreshing and healthy ice tea with mixed berry syrup, perfect for the summer.
Ingredients
- 3.50 oz mixed berries (raspberries, strawberries, blueberries, red currants, blackberries)
- 1 oz ginger, grated
- 1 cup brown sugar
- 3/4 cup pomegranate juice, unsweetened
- Juice of 1 lemon
- 4 tsp rooibos tea
- 2 cups water
- Fresh peppermint leaves
Instructions
- Rinse the berries and place them in a large pot.
- Add grated ginger, lemon juice, brown sugar, and pomegranate juice to the pot.
- Bring the mixture to a boil and let it simmer, uncovered, for 10 minutes.
- Allow the syrup to cool, then strain it and pour it into a bottle. Refrigerate the syrup.
- Prepare the tea by bringing 2 cups of water to a boil.
- Remove the boiling water from the heat and add the rooibos tea. Let it steep for 5 minutes, then strain and let it cool.
- In a glass, mix the cooled tea with the desired amount of berry syrup.
- Stir well and refrigerate until ready to serve.
- Serve the cocktail with ice cubes and garnish with berries and mint leaves.
