Ingredients

  • 3.50 oz mixed berries (raspberries, strawberries, blueberries, red currants, blackberries)
  • 1 oz ginger, grated
  • 1 cup brown sugar
  • 3/4 cup pomegranate juice, unsweetened
  • Juice of 1 lemon
  • 4 tsp rooibos tea
  • 2 cups water
  • Fresh peppermint leaves

Instructions

  1. Rinse the berries and place them in a large pot.
  2. Add grated ginger, lemon juice, brown sugar, and pomegranate juice to the pot.
  3. Bring the mixture to a boil and let it simmer, uncovered, for 10 minutes.
  4. Allow the syrup to cool, then strain it and pour it into a bottle. Refrigerate the syrup.
  5. Prepare the tea by bringing 2 cups of water to a boil.
  6. Remove the boiling water from the heat and add the rooibos tea. Let it steep for 5 minutes, then strain and let it cool.
  7. In a glass, mix the cooled tea with the desired amount of berry syrup.
  8. Stir well and refrigerate until ready to serve.
  9. Serve the cocktail with ice cubes and garnish with berries and mint leaves.
