Ingredients
- 1/2 cup frozen raspberries
- 1/4 cup frozen strawberries
- 1 tablespoon white sugar (to taste)
- 1/4 cup half and half
- 1/4 teaspoon vanilla extract
- 1/2 cup champagne
- Fresh strawberries for garnish (if desired)
Instructions
- In a medium saucepan, combine raspberries and diced strawberries. Heat over low/medium heat until soft (approximately 8-10 minutes).
- Add sugar to taste and cook for another 5-7 minutes, stirring frequently. Allow to cool for about 5 minutes.
- Blend or puree the mixture and then strain it.
- Return the mixture to the saucepan, add cream and vanilla, and stir until combined. Pour into an ice cube tray and freeze for 4-6 hours.
- Pour champagne into champagne flutes, filling about halfway. Add 3-4 of the prepared fruit ice cubes to each glass.
- Garnish with additional strawberries if desired.
