Ingredients

  • 1/2 cup frozen raspberries
  • 1/4 cup frozen strawberries
  • 1 tablespoon white sugar (to taste)
  • 1/4 cup half and half
  • 1/4 teaspoon vanilla extract
  • 1/2 cup champagne
  • Fresh strawberries for garnish (if desired)

Instructions

  1. In a medium saucepan, combine raspberries and diced strawberries. Heat over low/medium heat until soft (approximately 8-10 minutes).
  2. Add sugar to taste and cook for another 5-7 minutes, stirring frequently. Allow to cool for about 5 minutes.
  3. Blend or puree the mixture and then strain it.
  4. Return the mixture to the saucepan, add cream and vanilla, and stir until combined. Pour into an ice cube tray and freeze for 4-6 hours.
  5. Pour champagne into champagne flutes, filling about halfway. Add 3-4 of the prepared fruit ice cubes to each glass.
  6. Garnish with additional strawberries if desired.
