Ingredients

  • 1-2 tablespoons granulated sugar
  • 8 mint leaves
  • Juice of 1 lime
  • 1 ounce white rum (e.g. Bacardi)
  • 1/2 ounce coconut rum (e.g. Malibu)
  • 1/4 cup coconut milk
  • 3/4 cup ice cubes
  • Club soda
  • Fresh mint leaves (for garnish)
  • Fresh pomegranate arils or fresh cranberries (for garnish)

Instructions

  1. In a cocktail shaker or a sturdy glass, mix sugar, mint leaves, and lime juice.
  2. Use a muddler to gently crush the ingredients to release the mint oils.
  3. Fill the shaker/glass with ice, then pour in the white rum and coconut milk. Cover and shake, or stir if using a glass.
