Ingredients
- 1 Black tea bag
- 3 Green cardamom pods
- 4 Thin slices of ginger (1 mm thick)
- 1 Cinnamon stick (4 inches long)
- 2 Cloves
- 1/2 tsp Black peppercorns
- 1 Star anise
- 1/4 tsp Fennel seeds
- A pinch of freshly grated nutmeg
- 1/2 Vanilla pod
- 1 cup Water
- 2-3 tsp Light brown sugar
- 1 cup Whole milk
- 2 tbsp Dark rum
Instructions
- Measure out the spices.
- Gently bruise the ginger using a cocktail muddler in a saucepan. Add the split vanilla pod, whole spices, and the tea bag.
- Pour in the water and cook over moderate heat for 10 minutes.
- Add the milk and sugar, then bring back to a boil and simmer for 20 minutes.
- Stir and taste, adjusting sugar if needed.
- Strain the tea mixture through a fine-meshed sieve.
- Serve as is or with rum, garnished with cinnamon or star anise.
