Ingredients

  • 1 Black tea bag
  • 3 Green cardamom pods
  • 4 Thin slices of ginger (1 mm thick)
  • 1 Cinnamon stick (4 inches long)
  • 2 Cloves
  • 1/2 tsp Black peppercorns
  • 1 Star anise
  • 1/4 tsp Fennel seeds
  • A pinch of freshly grated nutmeg
  • 1/2 Vanilla pod
  • 1 cup Water
  • 2-3 tsp Light brown sugar
  • 1 cup Whole milk
  • 2 tbsp Dark rum

Instructions

  1. Measure out the spices.
  2. Gently bruise the ginger using a cocktail muddler in a saucepan. Add the split vanilla pod, whole spices, and the tea bag.
  3. Pour in the water and cook over moderate heat for 10 minutes.
  4. Add the milk and sugar, then bring back to a boil and simmer for 20 minutes.
  5. Stir and taste, adjusting sugar if needed.
  6. Strain the tea mixture through a fine-meshed sieve.
  7. Serve as is or with rum, garnished with cinnamon or star anise.
