Ingredients
- 1 pint fresh strawberries (halved with tops removed)
- 1 teaspoon vanilla extract
- 1-2 tablespoons sugar
- Splash of water
- 2 cups Aperol (chilled)
- 1 bottle prosecco (chilled)
- 1 cup strawberry-flavored sparkling water (chilled)
Instructions
- Preheat the oven to 350 degrees.
- On a parchment paper-lined baking sheet, toss the strawberries with vanilla extract and sugar, then roast for 25-30 minutes.
- Allow the roasted strawberries to cool, then puree them in a blender or food processor with a splash of water until smooth.
- Optionally, strain the puree through a fine-mesh sieve to remove seeds.
- Cover and refrigerate the strawberry puree.
- In a pitcher, combine the chilled roasted strawberry puree and Aperol.
- Slowly pour in the chilled prosecco and stir to mix.
- Top with the strawberry-flavored sparkling water.
