Ingredients

  • 1 pint fresh strawberries (halved with tops removed)
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons sugar
  • Splash of water
  • 2 cups Aperol (chilled)
  • 1 bottle prosecco (chilled)
  • 1 cup strawberry-flavored sparkling water (chilled)

Instructions

  1. Preheat the oven to 350 degrees.
  2. On a parchment paper-lined baking sheet, toss the strawberries with vanilla extract and sugar, then roast for 25-30 minutes.
  3. Allow the roasted strawberries to cool, then puree them in a blender or food processor with a splash of water until smooth.
  4. Optionally, strain the puree through a fine-mesh sieve to remove seeds.
  5. Cover and refrigerate the strawberry puree.
  6. In a pitcher, combine the chilled roasted strawberry puree and Aperol.
  7. Slowly pour in the chilled prosecco and stir to mix.
  8. Top with the strawberry-flavored sparkling water.
  9. Serve in white wine glasses or Champagne flutes. Enjoy!
