Ingredients
- 1/2 pound rhubarb, chopped into 1- to 2-inch slices
- 1 1/4 cups granulated sugar
- 1/4 cup water
- 2 tablespoons lime juice
- Pinch of kosher salt (optional)
- 1/4 cup rhubarb syrup
- 1/4 cup tequila
- 2 tablespoons ginger liqueur or orange liqueur such as Cointreau
Instructions
- In a heavy-bottomed saucepan, combine the rhubarb, sugar, and water.
- Heat the mixture over medium-low heat until the sugar dissolves and the liquid simmers.
- Continue to cook, stirring occasionally, until the rhubarb breaks down into a jammy texture.
- Strain the mixture through a fine-mesh strainer, pressing the rhubarb to extract as much liquid as possible.
- Let the rhubarb syrup cool to room temperature before using in cocktails.
- Rim 12-ounce cocktail glasses with kosher salt by running a lime around the rims and dipping them in salt.
- Fill a cocktail shaker with ice and add the lime juice, rhubarb syrup, tequila, and ginger or orange liqueur.
- Shake the cocktail vigorously for at least 30 seconds.
- Strain the margarita into the prepared glasses and serve.
