Ingredients

  • 1 lime, juiced
  • 1 1/2 tablespoons golden caster sugar
  • 1/4 teaspoon fresh ginger, peeled and finely grated
  • 1/2 cup crushed ice
  • 2 oz Cachaça
  • 5-6 fresh mint leaves

Instructions

  1. Roll the lime on a chopping board to release the juices, then cut it into wedges and squeeze the juice into a large jug, adding the wedges afterward.
  2. Add the sugar and grated ginger, then use a wooden rolling pin to muddle and mix the ingredients thoroughly.
  3. Half fill the jug with crushed ice and muddle again to incorporate the ice.
  4. Pour in the Cachaça and stir well, adjusting the sweetness to taste by adding more sugar if necessary.
  5. Top the jug with more crushed ice, tear in the mint leaves, and stir to combine.
