Ingredients

  • 1/2 medium seedless cucumber
  • 1 tablespoon roughly chopped fresh mint leaves
  • 1/2 tablespoon roughly chopped fresh basil leaves
  • 1/3 tablespoon honey
  • 2 oz vodka, chilled
  • 3 oz prosecco, chilled
  • Small sprigs of mint and/or basil for garnish

Instructions

  1. Cut the cucumber in half. Slice one half into circles and set aside in the refrigerator.
  2. Peel the other half, slice in half lengthwise, scrape out the seeds, and cut into chunks.
  3. Place the chunks of cucumber, mint, basil, and honey in a blender, add the vodka and blend until smooth.
  4. Refrigerate the puree for at least 1 hour until chilled.
  5. Pour the chilled puree into a pitcher, then pour in the Prosecco.
  6. Serve in the glass of your choice over ice, with the cucumber slices and additional fresh herbs for garnish.
