Ingredients

  • 1/8 cup water
  • 1/8 cup granulated sugar
  • 1/8 cup raspberries, fresh or frozen
  • 1 1/2 cups frozen raspberries
  • 3 oz. white rum
  • 1 oz. raspberry simple syrup
  • 1 oz. lime juice
  • Lime wedge

Instructions

  1. In a small saucepan, bring 1/8 cup of water to a boil over medium-high heat.
  2. Stir in 1/8 cup of granulated sugar until fully dissolved.
  3. Add 1/8 cup of raspberries and simmer on low heat for about 5 minutes.
  4. Strain the mixture through a fine-mesh sieve into a bowl and let it cool to room temperature.
  5. Store the raspberry simple syrup in an airtight container in the fridge if not using immediately.
  6. In a blender or food processor, combine 1 1/2 cups of frozen raspberries, 3 oz. white rum, 1 oz. raspberry simple syrup, and 1 oz. lime juice. Blend until smooth.
