Ingredients
- 1/8 cup water
- 1/8 cup granulated sugar
- 1/8 cup raspberries, fresh or frozen
- 1 1/2 cups frozen raspberries
- 3 oz. white rum
- 1 oz. raspberry simple syrup
- 1 oz. lime juice
- Lime wedge
Instructions
- In a small saucepan, bring 1/8 cup of water to a boil over medium-high heat.
- Stir in 1/8 cup of granulated sugar until fully dissolved.
- Add 1/8 cup of raspberries and simmer on low heat for about 5 minutes.
- Strain the mixture through a fine-mesh sieve into a bowl and let it cool to room temperature.
- Store the raspberry simple syrup in an airtight container in the fridge if not using immediately.
- In a blender or food processor, combine 1 1/2 cups of frozen raspberries, 3 oz. white rum, 1 oz. raspberry simple syrup, and 1 oz. lime juice. Blend until smooth.
