Ingredients

  • 1 1/2 oz bourbon
  • 1 1/2 oz pure pomegranate juice
  • 3/4 oz fresh lime juice
  • 3 oz Prosecco or dry sparkling white wine, chilled
  • Pomegranate seeds, lime slices, and fresh mint leaves for garnish

Instructions

  1. In a medium saucepan over medium heat, combine pomegranate seeds, water, and sugar. Bring to a boil, then reduce heat and simmer for about 20 minutes until pomegranate seeds are falling apart.
  2. Strain the mixture through a fine mesh strainer into a bowl, pressing the seeds with the back of a spoon to extract all the juice. Allow the pomegranate syrup to cool to room temperature, about 1 hour, then discard the seeds.
  3. In a pitcher or punch bowl, mix the cooled pomegranate syrup, bourbon, pomegranate juice, and lime juice. Add a handful of pomegranate seeds, lime slices, and mint leaves.
  4. To serve, fill an ice-filled glass halfway with the bourbon pomegranate mixture, then top with Prosecco. Garnish with pomegranate seeds, lime slices, and mint leaves.
