Ingredients

  • 1/4 fresh orange
  • 3-4 thin slices fresh ginger root
  • 1 (16 oz) bottle or can beer
  • 4 cloves
  • 1 small cinnamon stick (optional)
  • 1 tablespoon honey
  • 2 egg yolks
  • 1 tablespoon sugar
  • pinch of ground cinnamon (for sprinkling, optional)

Instructions

  1. Wash the orange and cut it into quarters.
  2. Slice off 2-3 thin slices of orange and set them aside for garnish.
  3. Peel a small piece of ginger and cut 3-4 thin slices.
  4. In a pot, combine the beer, cloves, cinnamon stick, honey, and the juice from the orange quarter.
  5. Add the remaining squeezed part of the orange (including the peel) into the pot.
  6. Heat the mixture on low heat, allowing it to simmer gently without boiling.
  7. In a small bowl, whisk the egg yolks with sugar until thick and fluffy.
  8. Gradually add hot beer from the pot to the egg mixture while whisking.
  9. Return the egg mixture to the pot and stir until thickened, without boiling.
  10. Strain the beer mixture into heat-resistant glasses or cups, and garnish with the saved orange slices.
  11. Lightly sprinkle with ground cinnamon and serve.
