Ingredients

  • 1 vanilla bean
  • 1 cup sugar
  • 1 cup water
  • 2 slices fresh orange
  • 2 slices fresh or frozen (thawed) peaches
  • 1/4 oz Vanilla Simple Syrup (1 1/2 teaspoons)
  • 1 oz vodka (2 tablespoons)
  • 4 oz lemon-lime soda (1/2 cup)

Instructions

  1. Split the vanilla bean lengthwise and scrape out the seeds.
  2. In a 1-quart saucepan, mix sugar, water, vanilla seeds, and the scraped bean. Heat to boiling over medium-high heat, stirring until the sugar is dissolved. Remove from heat and let it cool for 1 hour. Then discard the vanilla bean and pour the syrup into a glass jar. Refrigerate until needed.
  3. In a glass, mash peach and orange slices with a spoon.
  4. Add 1 1/2 teaspoons of the vanilla simple syrup and the vodka to the glass.
  5. Add ice and lemon-lime soda.
  6. If desired, garnish with additional fruit slices or a mint sprig.
