Ingredients

  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup water
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1/4 cup white grape juice or apple juice
  • 2 ounces amber rum
  • 2 ounces club soda
  • ice

Instructions

  1. In a saucepan, simmer the blueberries and water for 5 minutes to extract the juice.
  2. In a separate pot, make a simple syrup by simmering sugar and water for 4-5 minutes.
  3. Strain the juice from the berries and add it to a covered plastic container.
  4. Puree the strained berries and add the puree to the container along with the simple syrup, lemon juice, white grape/apple juice, and rum. Stir to combine.
  5. Place the container in the freezer for about 6 hours.
  6. Break down the ice sheets by using an immersion blender or vigorously stirring with a whisk.
  7. Return the container to the freezer and stir again after a few hours.
  8. When serving, spoon 4 ounces of the slush into an 8-ounce glass, add 2 ounces of club soda, stir, and serve.
