Ingredients
- 1/2 cup fresh or frozen blueberries
- 1/4 cup water
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1/4 cup white grape juice or apple juice
- 2 ounces amber rum
- 2 ounces club soda
- ice
Instructions
- In a saucepan, simmer the blueberries and water for 5 minutes to extract the juice.
- In a separate pot, make a simple syrup by simmering sugar and water for 4-5 minutes.
- Strain the juice from the berries and add it to a covered plastic container.
- Puree the strained berries and add the puree to the container along with the simple syrup, lemon juice, white grape/apple juice, and rum. Stir to combine.
- Place the container in the freezer for about 6 hours.
- Break down the ice sheets by using an immersion blender or vigorously stirring with a whisk.
- Return the container to the freezer and stir again after a few hours.
- When serving, spoon 4 ounces of the slush into an 8-ounce glass, add 2 ounces of club soda, stir, and serve.
