Ingredients

  • 1/8 cup water
  • 1/8 cup sugar
  • 1/4 cup pounded and roughly chopped lemongrass
  • 3/4 teaspoon roughly chopped fresh rosemary
  • 1/4 Thai, serrano, or jalapeño pepper (sliced; seeds removed for a milder drink)
  • 3/4 tablespoon fresh lemon juice
  • 2 oz vodka
  • 1/4 cup ginger beer
  • Lemon wedge and rosemary sprig (for garnish)
  • Ice

Instructions

  1. In a small saucepot, heat the water and sugar over medium-high heat until the liquid comes to a simmer and the sugar dissolves.
  2. Add the lemongrass, rosemary, and chile pepper, and turn off the heat.
  3. Let the mixture sit for 2 hours at room temperature, then strain out the solids.
  4. Chill the syrup in the fridge for at least an hour.
  5. In a pitcher, combine 2 tablespoons of the simple syrup, the lemon juice, and vodka.
  6. Pour in the ginger beer and stir.
  7. Taste and add more simple syrup if you want a sweeter drink.
  8. Fill a rocks or highball glass with ice and pour over the cocktail.
  9. Garnish with a rosemary sprig and lemon wedge, and serve.
