Ingredients
- 1/4 cup caster sugar
- 3 kumquats
- 2 Earl Grey tea bags
- 1 tbsp honey or agave syrup
- 1 lime
- 3-4 fresh mint leaves
Instructions
- In a saucepan, bring 1/2 cup of water and 1/2 cup of caster sugar to a boil.
- Add the kumquats and let the mixture simmer for about 15 minutes, adding extra hot water if needed.
- Allow the kumquats to cool in the syrup, then place them in the freezer.
- Brew the Earl Grey tea, using 2 tea bags, and let it cool in the refrigerator for 10 minutes.
- Slice the lime into wedges and add them to the cooled tea along with the honey and mint leaves.
- Add the frozen kumquats to the tea mixture and refrigerate for at least 1 hour before serving.
