Ingredients

  • 1 large egg yolk
  • 2 tsp golden monk fruit
  • 3 tbsp heavy cream
  • 1/2 cup unsweetened almond milk or coconut milk
  • 1/8 tsp ground nutmeg
  • Pinch of sea salt
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tbsp (rum, brandy, or bourbon), optional
  • Fresh whipped cream, for serving
  • Cinnamon, nutmeg, or pumpkin spice, for serving

Instructions

  1. In a mixing bowl, whisk together the egg yolk and sweetener until creamy.
  2. Heat the heavy cream, almond milk, nutmeg, and salt in a saucepan over medium heat, bringing it to a gentle simmer while whisking frequently.
  3. Remove from heat and slowly add the cream mixture to the egg and sweetener mixture, whisking constantly.
  4. Pour the combined mixture back into the saucepan and heat over low heat, whisking frequently, until it reaches 160°F.
  5. Remove from heat, stir in the vanilla extract, and add alcohol if desired.
  6. Strain the eggnog through a fine mesh sieve into a jar with a lid, then chill overnight.
  7. Serve topped with fresh whipped cream and a sprinkle of cinnamon, nutmeg, or pumpkin spice.
