Ingredients

  • 1 large egg (separated)
  • 2 teaspoons superfine sugar (divided)
  • 1 oz heavy cream
  • 1/2 tsp pure almond extract
  • 1/2 tsp pure vanilla extract
  • 1 1/2 oz aged rum
  • Garnish: grated cinnamon
  • Garnish: grated nutmeg

Instructions

  1. Separate the egg into two bowls.
  2. Using a hand mixer, beat the egg yolk until creamy.
  3. In a separate bowl, beat the egg white with 1 teaspoon of sugar until soft peaks form.
  4. Gently fold the egg white and yolk together using a spoon.
  5. In another bowl, beat the cream with the vanilla and almond extracts and the remaining 1 teaspoon of sugar until stiff peaks form.
  6. Add the rum to the cream and stir gently.
  7. Slowly fold the cream into the egg mixture.
  8. Serve immediately over ice, if desired, in a punch or martini glass.
  9. Garnish with grated nutmeg and cinnamon.
