Ingredients

  • 1 1/2 oz. Bombay Sapphire
  • 4 oz. premium tonic water
  • 1 piece of ginger (about 1 1/2-in.), thinly sliced
  • 1 cup sugar
  • 1 cup dried hibiscus flowers
  • 1 cup water
  • 1/2 oz. fresh lime juice plus thinly sliced rounds, for garnish
  • Ice

Instructions

  1. In a medium saucepan, combine sugar, hibiscus, ginger, and 1 cup water. Heat over medium-high heat until it simmers (do not boil), stirring until the sugar is dissolved.
  2. Remove the mixture from the heat and let it steep for 20 minutes to enhance the flavors.
  3. Strain the hibiscus-ginger syrup into a bowl using a fine sieve, discarding the solids. Refrigerate the syrup until chilled, for at least 30 minutes.
  4. Fill a glass with ice and pour in the Bombay Sapphire, 1 oz. of the hibiscus-ginger syrup, lime juice, and tonic water.
  5. Gently stir the mixture and garnish with 1-2 thinly sliced lime rounds.
