Ingredients
- 2 fresh pasteurized eggs
- 1 1/2 tablespoon granulated sugar
- 3/4 cup heavy whipping cream
- 1/2 cup whole milk
- 2 tablespoons bourbon
- 2 tablespoons Frangelico hazelnut liqueur
- Freshly grated nutmeg for garnishing
Instructions
- Carefully separate the egg yolks and whites into separate bowls.
- In a large bowl, whisk the egg yolks with 1 1/2 tablespoon of sugar until pale.
- Warm the cream and milk in a saucepan over medium heat until steaming. Slowly whisk about half of the cream mixture into the egg mixture, then pour the egg mixture back into the saucepan.
- Cook the mixture over medium heat, stirring frequently, until it coats the back of a spoon. Strain into a large bowl and cool completely.
- Slowly whisk in the bourbon and Frangelico, then refrigerate for about 1 hour until chilled.
- In another bowl, beat the egg whites with the remaining sugar until soft peaks form. Whisk the egg white mixture into the cooled egg yolk and bourbon mixture, then refrigerate until chilled.
- Just before serving, stir the eggnog and sprinkle with freshly grated nutmeg.
