Ingredients
- 1/6 cup water
- 1/6 cup caster sugar
- 1-inch piece fresh ginger (sliced)
- 3 1/3 fl oz fresh grapefruit juice
- 2/3 fl oz fresh lemon/lime juice
- 2/3 fl oz tequila
- 1-2 cups soda water (to taste)
- fresh lemon/lime slices
- ice cubes
Instructions
- In a small saucepan, combine water, caster sugar, and sliced ginger.
- Place over medium heat and heat until the sugar has completely dissolved.
- Increase the heat and allow the mixture to simmer for 5 minutes.
- Remove from heat and let the ginger syrup cool completely.
- In a jug, combine the grapefruit juice and tequila, then add some of the ginger syrup to taste.
- Top up with soda water to your desired level of sweetness.
- Serve the paloma in a glass with ice and garnish with lemon or lime slices.
