Ingredients

  • 1/6 cup water
  • 1/6 cup caster sugar
  • 1-inch piece fresh ginger (sliced)
  • 3 1/3 fl oz fresh grapefruit juice
  • 2/3 fl oz fresh lemon/lime juice
  • 2/3 fl oz tequila
  • 1-2 cups soda water (to taste)
  • fresh lemon/lime slices
  • ice cubes

Instructions

  1. In a small saucepan, combine water, caster sugar, and sliced ginger.
  2. Place over medium heat and heat until the sugar has completely dissolved.
  3. Increase the heat and allow the mixture to simmer for 5 minutes.
  4. Remove from heat and let the ginger syrup cool completely.
  5. In a jug, combine the grapefruit juice and tequila, then add some of the ginger syrup to taste.
  6. Top up with soda water to your desired level of sweetness.
  7. Serve the paloma in a glass with ice and garnish with lemon or lime slices.
