Ingredients
- 2 oz gin
- 1/2 oz ginger simple syrup
- 5 oz champagne or dry sparkling white wine
- Ice
Instructions
- In a nonreactive saucepan, combine 2 cups of water, 1 cup of sugar, and 4 ounces of finely chopped fresh ginger. Heat over medium-high heat until boiling, then simmer covered for 30 minutes to an hour.
- Allow the ginger syrup to cool for about 10 minutes, then strain it into a container. Refrigerate the syrup; it will keep for several weeks.
- Combine the gin and ginger simple syrup in a champagne flute, or mix them with ice and strain into the glass if they are not already chilled.
- Top the glass with champagne or dry sparkling white wine.
