Ingredients

  • 2 lemon peels
  • 1/2 teaspoon white sugar
  • 1 1/2 oz chilled white rhum agricole
  • 1 1/2 oz chilled fresh-squeezed orange juice
  • 1 oz chilled fresh-squeezed lemon juice
  • 1 teaspoon honey

Instructions

  1. In a heavy pint glass or small glass pitcher, muddle the lemon peel and sugar until you have a uniform paste.
  2. Add the rhum agricole, lemon juice, orange juice, and honey.
  3. Use a caralhinho or wooden spoon to spin the mixture until frothy and well integrated.
  4. Taste and adjust with more lemon juice or honey as needed.
  5. Strain the mixture through a sieve into a small stemmed glass or over ice into a tall glass.
