Frothy Lemon Rhum Delight

Ingredients
- 2 lemon peels
- 1/2 teaspoon white sugar
- 1 1/2 oz chilled white rhum agricole
- 1 1/2 oz chilled fresh-squeezed orange juice
- 1 oz chilled fresh-squeezed lemon juice
- 1 teaspoon honey
Instructions
- In a heavy pint glass or small glass pitcher, muddle the lemon peel and sugar until you have a uniform paste.
- Add the rhum agricole, lemon juice, orange juice, and honey.
- Use a caralhinho or wooden spoon to spin the mixture until frothy and well integrated.
- Taste and adjust with more lemon juice or honey as needed.
- Strain the mixture through a sieve into a small stemmed glass or over ice into a tall glass.
