Ingredients

  • 1 large pasteurized egg, separated
  • 3 tablespoons sugar
  • 1/2 tablespoon brandy or rum
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • 1/8 teaspoon bitters (preferably Angostura)
  • 1/8 teaspoon cream of tartar, optional
  • 3/4 cup boiling water or hot 2% milk
  • 1 ounce brandy
  • 1 ounce rum
  • Freshly grated nutmeg, optional

Instructions

  1. In a large bowl, beat the egg yolks until thin and loose for about 1 minute.
  2. Gradually beat in the sugar, brandy, vanilla, pumpkin pie spice, and bitters until thick and frothy, for 3-5 minutes.
  3. In another large bowl, beat the egg whites (and, if desired, cream of tartar) on high speed just until stiff but not dry.
  4. Fold a fourth of the whites into the yolk mixture until no white streaks remain.
  5. Fold in the remaining whites until combined. Refrigerate the mixture, covered, until serving.
  6. For each serving, place 3/4 cup of the mixture in a large mug.
  7. Add boiling water, brandy, and rum. Stir until blended.
  8. If desired, top with freshly grated nutmeg.
