Ingredients
- 1 egg (separated into yolk and white)
- 2 tablespoons superfine sugar
- Pinch of salt
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon grated nutmeg, plus more for garnish
- 1/3 cup brandy
- 2 tablespoons milk
- 1 tablespoon heavy cream
Instructions
- In a bowl, beat the egg yolk and slowly add 2 teaspoons of sugar, mixing until dissolved. Add the vanilla extract, nutmeg, and salt. Continue mixing until the mixture is thick and pale yellow.
- Slowly beat in the brandy, followed by the milk and heavy cream.
- Cover and chill the mixture in the refrigerator for at least one hour.
- Shortly before serving, whip the egg white until soft peaks form.
- Gradually beat in the remaining 2 teaspoons of sugar, continuing until soft peaks form again.
