Ingredients
- 3/8 cup Cape Cod Select premium frozen cranberries
- 3/8 cup blueberries (fresh or frozen)
- 2 tablespoons granulated sugar
- 1/4 cup water
- 1 1/4 leaves fresh basil
- 1/4 bottle Prosecco
Instructions
- In a medium saucepan, combine the cranberries, blueberries, sugar, and water. Simmer over medium heat until the sugar dissolves.
- Add the basil to the mixture and remove from heat. Let it cool for a few minutes.
- Use a blender to purée the berry mixture until it becomes liquidy.
- Line a pie pan with parchment paper and pour the berry purée through a mesh strainer into the pan, discarding the solids.
- Freeze the mixture for two hours. Use a fork to rake the frozen parts to break up the ice, then continue to freeze for 6 hours, raking the frozen purée with a fork until it's all broken up.
- Scoop the cran blueberry basil granita into a champagne flute and top it with Prosecco. Serve immediately.
