Ingredients

  • 1 tbsp. butter, softened
  • 3/4 tbsp. packed brown sugar
  • 2 tbsp. vanilla ice cream, softened
  • 1/8 tsp. ground cinnamon
  • 1/2 cup apple cider
  • 1/4 cup rum

Instructions

  1. In a mixing bowl, beat the softened butter and brown sugar until creamy.
  2. Add the softened vanilla ice cream and ground cinnamon to the bowl, and mix until well combined.
  3. Transfer the buttered rum batter into a mason jar or resealable container, and freeze until mostly hardened, for about 2 hours or until ready to use.
  4. In a medium saucepan, heat the apple cider until it boils, stirring occasionally.
  5. Remove the cider from the heat and pour it into a pitcher or easy-to-serve container.
  6. Place about 2 tablespoons of the prepared buttered rum batter into a mug.
  7. Fill the mug about 1/3 of the way up with rum.
  8. Top the rum with hot apple cider and stir before serving.
