Ingredients
- 3/4 cup full-fat coconut milk
- 1.50 organic egg yolks
- 1/4 teaspoon vanilla extract
- 1 tablespoon organic maple syrup OR 1 tablespoon Swerve granular sugar replacement
- A pinch of ground cinnamon
- A pinch of ground nutmeg
- A pinch of ground cloves
- A splash of rum or brandy (optional)
Instructions
- Separate the eggs and reserve the egg whites for another use.
- In a high-speed blender, combine the coconut milk, egg yolks, vanilla extract, sweetener, and spices. Blend until smooth.
- Pour the mixture into a saucepan and heat gently over medium heat, stirring often, until the eggnog thickens. Be careful not to let it boil.
- Once the eggnog has thickened, remove it from the heat and pour it into a glass container. Chill it in the refrigerator overnight.
- When ready to serve, stir in the alcohol if desired.
