Ingredients

  • 3/4 cup full-fat coconut milk
  • 1.50 organic egg yolks
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon organic maple syrup OR 1 tablespoon Swerve granular sugar replacement
  • A pinch of ground cinnamon
  • A pinch of ground nutmeg
  • A pinch of ground cloves
  • A splash of rum or brandy (optional)

Instructions

  1. Separate the eggs and reserve the egg whites for another use.
  2. In a high-speed blender, combine the coconut milk, egg yolks, vanilla extract, sweetener, and spices. Blend until smooth.
  3. Pour the mixture into a saucepan and heat gently over medium heat, stirring often, until the eggnog thickens. Be careful not to let it boil.
  4. Once the eggnog has thickened, remove it from the heat and pour it into a glass container. Chill it in the refrigerator overnight.
  5. When ready to serve, stir in the alcohol if desired.
