Ingredients
- 1/2 cup (4 oz.) coconut milk
- 3 tbsp evaporated milk
- 1/2 cinnamon stick
- 1 egg yolk
- 2 tbsp sweetened condensed milk
- 1 1/2 tbsp aguardiente or white rum
- 1/2 tsp vanilla extract
- 1 pinch of ground cinnamon, for garnishing (optional)
- 1 tbsp toasted coconut chips or toasted shredded coconut, for garnishing (optional)
Instructions
- In a saucepan over medium-low heat, combine the coconut milk, evaporated milk, and cinnamon stick, and bring to a simmer.
- In a separate bowl, beat the egg yolk with sweetened condensed milk until thick and pale yellow.
- Gradually whisk in half of the hot milk mixture into the egg yolk mixture, then pour it back into the saucepan.
- Cook the mixture, stirring constantly, for 5 to 8 minutes or until it thickens and coats the back of a spoon.
- Remove from heat, strain through a fine-meshed sieve, and remove the cinnamon stick. Allow the mixture to cool completely.
- Stir in the rum or aguardiente and vanilla, then cover and chill in the refrigerator for at least 6 to 8 hours or up to 3 to 5 days.
- Pour into a small glass to serve and garnish with toasted coconut and a sprinkle of ground cinnamon, if desired.
