Ingredients

  • 1/2 cup (4 oz.) coconut milk
  • 3 tbsp evaporated milk
  • 1/2 cinnamon stick
  • 1 egg yolk
  • 2 tbsp sweetened condensed milk
  • 1 1/2 tbsp aguardiente or white rum
  • 1/2 tsp vanilla extract
  • 1 pinch of ground cinnamon, for garnishing (optional)
  • 1 tbsp toasted coconut chips or toasted shredded coconut, for garnishing (optional)

Instructions

  1. In a saucepan over medium-low heat, combine the coconut milk, evaporated milk, and cinnamon stick, and bring to a simmer.
  2. In a separate bowl, beat the egg yolk with sweetened condensed milk until thick and pale yellow.
  3. Gradually whisk in half of the hot milk mixture into the egg yolk mixture, then pour it back into the saucepan.
  4. Cook the mixture, stirring constantly, for 5 to 8 minutes or until it thickens and coats the back of a spoon.
  5. Remove from heat, strain through a fine-meshed sieve, and remove the cinnamon stick. Allow the mixture to cool completely.
  6. Stir in the rum or aguardiente and vanilla, then cover and chill in the refrigerator for at least 6 to 8 hours or up to 3 to 5 days.
  7. Pour into a small glass to serve and garnish with toasted coconut and a sprinkle of ground cinnamon, if desired.
