Ingredients
- 2 tablespoons granulated sugar
- 2 tablespoons water
- 3 ounces Prosecco (or champagne)
- Juice and zest of 1 lemon
Instructions
- Create simple syrup by whisking together sugar and water in a saucepan over medium heat until the sugar is completely dissolved.
- Transfer the simple syrup to a large bowl and let it cool completely. You can speed up the cooling process by setting the bowl over a larger bowl filled with ice water.
- Stir in the Prosecco, lemon juice, and lemon zest into the simple syrup mixture, then pour it into a 9"x13" pan and freeze for 2 hours.
- After 2 hours, use a fork to scrape up the icy parts and return the mixture to the freezer. Repeat this process every 30 minutes until the mixture is completely frozen, about 2 hours more.
- Cover the pan with plastic wrap and keep it in the freezer until ready to serve.
