Ingredients
- 1 oz. caster sugar
- 3 strawberries, hulled, chopped
- 3 oz. rosé wine
- 1 oz. strawberry liqueur
- 1 oz. chilled soda water
- Extra halved strawberries, for garnish
Instructions
- In a small saucepan over medium heat, combine the sugar and 1/4 cup of water. Cook and stir for 5 minutes until the sugar is dissolved.
- Increase the heat to high and bring the mixture to a boil. Then, reduce the heat to low and let it simmer, without stirring, for 5 minutes. Remove from heat and let it cool completely.
- Place the chopped strawberries in a blender and blend until smooth, adding a splash of water if needed. Strain the mixture into a large jug.
- Stir in the cooled sugar syrup and rosé wine. Pour the mixture into a 2-cup metal container and freeze it overnight.
- Once frozen, use a fork to scrape the mixture, creating large ice crystals.
- In a separate jug, combine the strawberry liqueur and soda water. Pour the mixture into serving glasses and top with the scraped frosé. Garnish with extra halved strawberries and serve immediately.
