Ingredients

  • 6 oz kombucha
  • 1/3 cup fresh blueberries
  • 1 tbsp organic sugar
  • 1 tbsp water
  • 6-7 fresh mint leaves
  • Squeeze of fresh lime juice
  • Fresh blueberries, mint, and lime wedges for garnish

Instructions

  1. In a small saucepan, combine the blueberries, sugar, water, and mint. Bring to a boil over medium heat.
  2. Use a fork to smash the blueberries, then reduce the heat and gently boil for another 5 minutes.
  3. Remove from heat and allow to cool to room temperature. You can speed up this process by placing it in the refrigerator.
  4. Combine the blueberry mixture with the kombucha in a large jar and stir together.
  5. Pour the mixture into a bottle, distributing the pulp evenly.
  6. Seal the bottle tightly and place it in a dark, warm place for 2-4 days for secondary fermentation.
  7. Refrigerate for at least 24 hours before serving. For extra carbonation, wait at least one week before drinking.
  8. When ready to drink, strain the mixture using a fine mesh strainer to remove the pulp and SCOBY. Pour into a glass with ice, add a squeeze of fresh lime juice, and garnish with fresh blueberries and mint. Enjoy!
