Ingredients

  • 2 oz roasted butternut pumpkin puree
  • 1/2 oz maple syrup
  • 1/2 oz extra virgin olive oil
  • 1/2 tsp ground cinnamon, plus extra for serving
  • Pinch of freshly grated nutmeg
  • 1 sage leaf, plus extra for serving
  • 1/2 oz caster sugar
  • 1 1/2 oz vodka
  • Juice of 1/4 lemon
  • 1/2 eggwhite

Instructions

  1. Preheat the oven to 350°F.
  2. Combine the roasted butternut pumpkin, maple syrup, olive oil, cinnamon, nutmeg, and sage in a small roasting pan lined with parchment paper.
  3. Roast for 45 minutes or until caramelized and very tender. Remove and let it cool, then discard the sage leaf.
  4. Transfer the roasted pumpkin mixture to a food processor and blend into a smooth puree.
  5. In a small saucepan over medium heat, combine the sugar and 1/4 cup of water, stirring until the sugar dissolves. Remove from heat and let it cool completely.
  6. Add the pumpkin puree and vodka to the sugar mixture, then chill for at least 2 hours to infuse. Strain through a sieve lined with muslin or clean cloth, squeezing to drain excess liquid without pushing the puree through. Discard solids.
  7. Place half of the vodka mixture in a cocktail shaker half-filled with ice.
  8. Add half of the lemon juice and the eggwhite, then close and shake well.
  9. Strain into a cocktail glass, repeat with the remaining vodka mixture, lemon juice, and eggwhite.
  10. Sprinkle with extra cinnamon and garnish with a sage leaf to serve.
